Evelyn Jones Knight, 88, formerly of Bethel, NC, was born on June 16, 1932, in Bethel, NC, to the late John and Johnnie Mae Jones. She departed this life on Sunday, December 6, 2020, at her home surrounded by family.
Evelyn attended the Bethel Union schools and graduated Salutatorian of her class. For some years she worked as a teacher's assistant in the library among her other jobs.
Evelyn was a member of the Riddick Chapel Missionary Baptist Church in Bethel, NC, where she served as one of the church secretaries for a number of years. She was also active in the Pitt County NAACP where she was honored as the NAACP Mother of the Year. Evelyn loved to travel and often went to the beach. Some of her many travels included traveling to California and many states up and down the East Coast. She even accompanied Ms. Naomi King (sister-in-law of Dr. Martin Luther King, Jr.) on a cruise to the Bahamas.
Evelyn had a big heart and loved her family dearly. Right or wrong, she protected her children. She was affectionately called "Sister" by her nine siblings and GiGi by her great grandchildren.
Evelyn was married to the late Henry Knight for over twenty-five years.
She was preceded in death by her parents, four brothers, and four sisters. She leaves to celebrate and cherish her memory three daughters and one son: Rosslyn Crandell (Bobby) of Charlotte, NC; Kitty Pope of Atlanta, GA; Henry Knight (Polly) of Raleigh, NC; and Cheryl Knight of the home. She leaves her memory to a devoted granddaughter that she helped to raise, Cheria Knight (Joel) and an "adopted" son, Sherwin "Zeke" Jones(Gwen) of Savannah, GA. In addition, she leaves to cherish her memories nine grandchildren and twenty great-grandchildren.
Evelyn is also survived by her youngest sister, Mrs. Dorothy Moultrie (O'Neal) of Germantown, MD. She leaves behind a host of nieces, nephews, cousins, relatives, friends, and a Bethel/ Greenville community who loved her dearly.
